List of ingredients
- 1 slice of Caractère round loaf
- 250 g chickpeas
- 500g peas
- 5 g sesame oil
- 5 g cumin
- 5 g pink garlic
- Lemon juice and zest
- Olive oil
- Turmeric
- 10 g pomegranate
- 40 g hummus
- 20 g feta cheese
- Pea shoots
- Yellow marigold flowers
- Salt, pepper
Preparation steps
For the lemon zest hummus:
- Cook the peas and chickpeas in salted water then cool in iced water
- Drain peas and chickpeas
- Keep a few peas for decoration
- Place them in a blender with the cumin, turmeric, peeled garlic, lemon juice and zest
- Blend until smooth
- Work in the sesame oil
- Season with salt and pepper to taste
For the open sandwich:
- Toast 1 side of the bread slice under the grill in the oven
- Spread the hummus on the toasted side
- Add the peas, chickpeas, pomegranate seeds then crumble over the feta on the slice
- Drizzle with olive oil, add the pea shoots and the marigolds
