  • 1 slice of Caractère round loaf
  • 250 g chickpeas
  • 500g peas
  • 5 g sesame oil
  • 5 g cumin
  • 5 g pink garlic
  • Lemon juice and zest
  • Olive oil
  • Turmeric
  • 10 g pomegranate
  • 40 g hummus
  • 20 g feta cheese
  • Pea shoots
  • Yellow marigold flowers
  • Salt, pepper

For the lemon zest hummus:

  • Cook the peas and chickpeas in salted water then cool in iced water
  • Drain peas and chickpeas
  • Keep a few peas for decoration
  • Place them in a blender with the cumin, turmeric, peeled garlic, lemon juice and zest
  • Blend until smooth
  • Work in the sesame oil
  • Season with salt and pepper to taste

For the open sandwich:

  • Toast 1 side of the bread slice under the grill in the oven
  • Spread the hummus on the toasted side
  • Add the peas, chickpeas, pomegranate seeds then crumble over the feta on the slice
  • Drizzle with olive oil, add the pea shoots and the marigolds
